Low Mein Noodles 5 pounds
celery cut on the bias 8 ounces
carrot shredded 6 ounces
red pepper cut bias 6 ounces
green onions sliced 4 ounces
snow peas cut bias 8 ounces
bean sprouts washed and dried and chopped 1 pound
water chestnuts chopped 6 ounces
roasted sesame dressing 3 cups
garnish with toasted sesame seeds and more chopped green onion
Roasted sesame seed dressing
salad oil 3/4 cup
peanut oil 2 T
sesame seed oil 2 T
soy sauce 2 T
rice vinegar 1/4 cup
sugar 2 T
white pepper 1 tsp
Mix oils together and drizzle slowly whisking to the soy sauce, rice wine vinegar, sugar and pepper.
